Duck Bau Buns

There’s no wrong way of doing Bau Buns, add whatever you like and enjoy as either a snack or main course. This recipe cheats a little by buying the buns, but you’ll still need to steam them.
Ingredients
2 people - 3 each
Duck
- duck2 breasts
 - dark soy sauce1 tablespoon
 - light soy sauce1 tablespoon
 - ginger1 teaspoon
 - honey1 teaspoon
 - orange (juice)1 tablespoon
 - sesame seedssprinkle
 - sesame oil1 teaspoon
 
To Serve
- bau buns (shop bought from M&S)6
 - carrothalf
 - cucumberhalf
 - Rice Mirin1 tablespoon
 - rice vinegar1 tablespoon
 - lime1
 - garlic1 teaspoon
 - ginger1 teaspoon
 - coriander
 - spring onion (chopped)
 - peanuts

					Instructions
- Slice the duck into strips. Combine all the duck ingredients together except for the oil and marinade for at least 10 minutes
 - Shred the carrot and cucumber, using a food processor if you have one. Drain any excess juice and combine with Rice Mirin, Rice Vinegar, quarter of a Lime juice, Ginger and Garlic, then set aside
 - Chop your peanuts and gently toast them, slice the spring onion and coriander, then set all aside in individual bowls
 - Steam the Bau Buns according to the instructions using either a steamer (bamboo preferred!), or a sieve over boiling water. Whilst they are steaming, pan fry the duck in Sesame Oil on a high heat for a few mins on either side, depending on how small you sliced them. Serve immediately and sprinkle with Sesame Seeds
 - Build the buns up with duck, carrot/cucumber, fried onions, peanuts, spring onion and coriander
