Instructions
Chips
- Peel the potatoes, cut into strips and par-boil for 5 minutes Set the oven to 180C and place a tray with a helping of oil
- After draining the potatoes, add back to the pan, add flour and shake well, bashing the potatoes. Add to the tray in the oven Shake every now and then and serve when golden
Mussels
- Wash the mussels out in cold water. Discard any that won't close when squeezed together. Remove any beards by pulling hard
- Add the onion and garlic to a large pan and soften for 1-2 minutes on a low heat
- Add the mussels and wine, turn up the heat to high and cover for 4 minutes. Every minute shake the pan well to mix the mussels up
- Remove from the heat, add the cream and parsley, serve immediately
